A chef who honed his skills at a Michelin-starred restaurant in Bergen, Norway, in Prague’s fine-dining scene, and on Bratislava’s culinary scene. Today, however, he devotes his energy to the region he considers his true home.
And perhaps that is precisely where he finds his greatest inspiration.



His love of cooking began at his grandmother’s stove
Behind every good chef lies a story. Pavol’s story began quite unobtrusively—in his grandmother’s kitchen. As a child, he spent hours with her baking and cooking. It was there that his passion was born, a passion that would later become his calling.
“What fascinates me about cooking is that it’s never the same. Every season brings new ingredients, every guest has different expectations, and every dish tells its own story.” It is precisely this constant creativity that keeps him passionate about gastronomy.
From the World Back to Považie
After years spent abroad, many would expect him to stay in big cities or prestigious restaurants. He, however, decided otherwise. He returned to Považie—not because life here is easier, but because he sees enormous potential here. According to Pavel, our region has everything high-quality gastronomy needs—exceptional nature, honest producers, traditional recipes, and high-quality local ingredients. The only thing missing is a stronger connection among the people who bring them to life.
“For me, Považie is home in the deepest sense of the word. The landscape, the people, and the pace of life are things that no big city can replace.”



Global Experience, Local Flavors
Every kitchen he’s worked in has taught him something different. At the Michelin-starred restaurant Bare in Bergen, Norway, he learned to have the utmost respect for local ingredients. Prague taught him the precision of fine dining, and Bratislava taught him the courage to experiment. Today, he combines all these experiences into a single concept. Not to copy foreign trends—quite the opposite. His goal is to show that world-class dishes can be created using local ingredients. Modern techniques, seasonality, respect for the craft, and the story hidden in every course. All of this creates an experience that doesn’t begin on the plate, but with the very selection of ingredients.

The Future of Flavors Belongs to the Regions
When you ask Pavla what gastronomy in the Považie region should look like in ten years, she doesn’t talk about luxury restaurants or Michelin stars.
She talks about people.
About farmers, growers, local producers, and chefs who will collaborate. About guests who will know the origin of the food on their plates. And about a region that will be known not only for its castles and nature, but also for its flavors. “I’d love for Považie to become a gastronomically self-sufficient region. For people to be proud of what’s created here, and for visitors to come here for the food as well.”
It’s a vision that isn’t built on grand gestures. It starts with supporting local producers, respecting traditions, and having the courage to do things a little differently. And perhaps that is precisely where the future of gastronomy in Považie lies. Because the best flavors often don’t come from around the world. They come from home.
